This fingerling is truly the classic of the bunch, maturing in 80-90 days. Its slender shape and rose-colored skin make it not only delicious, but also quite attractive. It bears distinct eyes as well as smooth and firm yellow flesh which is great when used as a flavored puree to thicken soups, sauces and gravies. Also makes a wonderful roasting potato!
