Parsnips are long-season vegetables grown for their carrot-like roots. Sow seed as soon as the soil can be worked in the early spring. A member of the parsley family, parsnips take very little effort to grow once the seed germinates. A tangy and sweet taste.
Garden Tip: Harvest parsnips after they have been exposed to freezing temperatures. The cold changes the starch in the roots to sugar. Store parsnips in the ground all winter and dig them as needed.
